ingredient :
  • 1 (9 inch) unbaked pie crust
  • 3 / 4 cup toffee baking bits
  • 1 (15 ounce) can pumpkin puree
  • 1 / 2 cup white sugar
  • 1 cup brown sugar
  • 1 1 / 2 teaspoon ground cinnamon
  • 1 teaspoon ground ginger
  • 1 / 2 teaspoon ground nutmeg
  • 1 teaspoon vanilla extract
  • 1 pinch of salt
  • 1 / 2 cup milk
  • 1 / 2 cup heavy cream
  • 3 eggs

  1. Preheat oven to 375 degrees F (190 degrees C). Sprinkle toffee bits into pie shell; set aside.
  2. In a large bowl, combine pumpkin puree, white sugar, brown sugar, cinnamon, ginger, nutmeg, vanilla and salt. Whisk cream, milk and eggs until smooth and creamy filling. Pour the filling over the toffee bits in pie shell. Place on a baking sheet in middle of oven. 
  3. Bake in oven for 60 to 90 minutes, or until filling is set and crust is golden brown.
